
Back in 1999, Fergus Henderson of St. Johns fame quietly released a book that has become a classic - Nose to Tail eating. This book is a fantastic collection of unpretentious, carnivorous dishes that makes the most of the animal we choose to eat. As he says, ‘it would be disingenuous to the animal not to make the most of the whole beast; there is a set of delights, textural and flavoursome, which lie beyond the fillet.’

The book looks full of classics like braised shoulder of lamb, pigeon pie, venison liver and pressed pig’s ear. As well as breads and sweets - sourdough loaves and lardy cakes and puddings.
